A mission

Having worked in ktichen all my life, I realised how surreal this secteur was. Crying in the walk-in, dreaming about MEP and eating some left over chicken while noting the prep list was not an exception but an everyday. My whole proffesional life I heard people say over and over again, this is just how it is. Kitchen is hard, suck it up. It often got compared to the military. I respected and admired the people in this industry, yet it astonished me every time i talked to someone outside of this world and how less they knew about it. Food and kitchen is such a huge part of everone life, however know one has a clue what and how it gets onto the plate. How many people cut and peel for houirs and end up being yelled at because of one single badly done asparagus. My mission is not to change the industry but the bring light into it and highlight the people who stand behind it. As much as we care about tracability, the people are just as important as the products being used. Hands is there to connect the people doing the magic and the people watching it, and I will try to make that happen
